I also wanted to share a recipe I got from Pinterest. Those stuffed peppers you see there are so yummy. I’ve been asked to share the recipe:


What you need:

1 tbsp EVOO

2 cup ground turkey

2 cloves of garlic

1/2 cup onion diced

1 2/3 cup sweet potato,diced

1/2 cup tomato sauce

ground chili peppers (optional)

salt & pepper

2 big bell peppers cut in half

feta cheese and fresh parsley, chopped


Preheat oven to 350F

heat olive oil add ground turkey & garlic. stir occasionally and cook for about 10 minutes

add onions & cook until onions are gold brown

add sweet potato, cover skillet cook until tender. about 8 mins. add tomato sauce, ground chili pepper, salt, pepper to taste.

arrange the peppers in a baking dish. the cavity side is facing you. fill each bell pepper halve with ground turkey-sweet potato mix.

Bake uncovered for about 30 minutes,or until the peppers are cooked and soft.

Remove from the oven and garnish with feta and parsley.
