Baked Spinach meatballs

Hi loves
Are you ready for the easiest, most delicious recipe ever and done in under 30 min? (Come on all you mommies need to be happy about this) I’m not much of a cook, but I can follow a recipe like nobody’s business! 🙂 I actually found this recipe on pinterest a while back and have been using it ever since. (This one was voted into the recipe box) here goes!

What you will need:
Ground turkey (I got my lean turkey meat from Trader Joe’s)
1-1/2 packs of organic spinach
1 onion minced
1 cup fresh bread crumbs (I used what I had the italian seasoned one)
1/2 tsp garlic powder
1/2 tsp dried oregano
1 tsp sea salt
1/4 tsp red pepper flakes

Now lets get cooking!

Preheat oven to 400 degrees. Grease baking sheet (so they don’t stick)
In a medium bowl mix onions, spinach (put onion in food processor and pulse till minced- place in bowl, then add spinach to processor and pulse till chopped) meat, salt, spices and bread crumbs. Mix thoroughly with your hands fully integrating all the ingredients.

Then make about 1inch size balls and line on the baking sheet. Bake for 10 minutes, remove from over and flip balls. Return to oven and bake for an additional 10 minutes.

We ate ours today with some organic whole wheat pasta from Trader Joe’s

I added a little pasta sauce (optional)
